It is so expensive because it is an extremely labor-intensive crop. The buds developed to complete flowers in the fall. Each flower has three threadlike things in the center. More than 180,000 crocus flowers must be grown, cared for, hand-harvested and processed to make one pound of saffron.
Though saffron does not expire or spoil, it can lose its flavor and potency over time (usually in two to four years).Stored in a cool, dry place, and packed in a tight tin can be saved a minimum of three years.
